This one has the best flavors of summer. Simple food is just perfect for sunny days!
Grilled Cantaloup Salad & Pistachio Vinnaigrete
WHAT YOU WILL NEED:
Serves 2-3 portions
- ½ cantaloupe melon, sliced
- 1 medium zucchini, sliced
- 2-3 handfuls rucola
- 1 hanful fresh parsley and mint
- 2 tbsp toasted pistachios
- Optional: vegan feta, crumbled
Pistachio Vinaigrette:
- 2-3 tbsp olive oil
- 1 tsp mustard
- ¼ tsp salt
- •1 tbsp pistachio butter(or just use crushed pistachios)
- ¼ cup water
- 1 shallot, chopped
HOW TO:
- Heat a frying pan or grill and grill both sides of the cantaloupe slices. Set aside;
- Repeat the grilling with the zucchini slices and set aside;
- Mix the chopped herbs with the rucola, zucchini and cantaloupe slices;
- Top everything with the toated pistachios, optional feta and vinaigrette;
- Vinaigrette: Just mix everything in a small jar until smooth use it to top your salad;
