I love corn, it tastes like childhood for me!
When summer starts here I need to go and get some of my comfort foods. I have always the impression it’s not summer without it!
Corn hummus is not something I have tried before but I am already in love! It goes do well with summer veggies like zucchini, tomatoes…
So easy and delicious, there is no reason for you not to try!
uWHAT YOU WILL NEED:
for 4-6 people
- 100g cooked chickpeas
- 200g cooked corn(I use frozen corn, canned also works)
- ¼ cup water
- 1 tbsp tahini
- 1 tbsp olive oil
- Juice from ½ lime
- 1 tsp salt
HOW TO:
- Add all the ingredients to a blender and blend it for 2 minutes until smooth and creamy;
- Adjust salt if needed;
- Serve it with a drizzle of olive oil and a pinch of sweet paprika;
- Enjoy!
