Pão de Queijo is a traditional Brazilian recipe and here you can try the Plant Based Version of it. I don’t use cheese so instead I added White Beans to add some extra fibers, protein and nutritional goodness.
This can be a great recipe for kids since it’s pink, its small and really delicious. Enjoy as a snack, starter or as a very special breakfast!
I served with some vegan cream cheese but you can add whatever you prefer to this amazing pink bred.
I can promise you are going to want those everyday!!
WHAT YOU WILL NEED:
- 300g cooked white beans
- 200g cooked beetroots(or just potatoes or more beans if you don’t want the pink color)
- 1 ½ teaspoons salt
- 2 tablespoons Nutritional Yeast
- 500g Manioc Startch(or 300g polvilho azedo + 200g polvilho doce) – You can find those in asian and Latin shops
- 1 tablespoon chia seeds
- 120g olive oil
- 1/2 cup water
HOW TO:
Place the cooked white beans and the inhames in the food processor and blend it until a purée consistency;
Transfer the mixture to a bowl and add all the ingredients and mix really well with the hands until it becomes a sticky dough. Let it cool down if it is warm;
Make small balls of about 30g with the help of an ice cream scoop or 2 big spoons;
You can Bake them immeadtly at 180°C or store in the freezer and use them when you feel like. No need to defrost before popping it in the oven.
Pre-heat the oven at 200°C, pop them in, lower the temperature to about 180°C and let it bake for about 30 minutes;
This recipe is great freshly baked, it holds well for a few hours but after a day it can dry out so I advise you to make a big batch, freeze the balls before baking and bake according to your needs.
