WHAT YOU WILL NEED:
for 4 people
- 320g cooked red lentil
- 150g carrot
- 2 tbsp olive oil
- ½ medium onion, chopped
- ½ tsp dried coriander powder
- ¼ tsp cinnamon powder
- ½ tsp dried ginger
- ¼ tsp curcuma powder
- ½ tsp cumin powder
- ¼ tsp cardamom powder
- Juice from ½ orange or 1 tbsp applecider vinegar
- ½ teaspoon salt
- 50g crushewd toasted cashews
- 2 tbsp raisins
HOW TO:
- Heat a frying pan with a drizzle of olive oil and fry the chopped onion with all the spices for about 2 minutes;
- Add the carrot slices and orange juice and cook it for about 5 minutes;
- Transfer the cooked carrots with the spices to a blender or food processor with the red lentil and blend it for about 2 minutes until it becomes a thick, smooth paste. Set aside to cool down;
- Mix with the crushed nuts and raisins;
- Use it to fill the speed dosas, as a spread over your toast or as a topping to your favorite salad;
