Carrot Lentil Hummus

WHAT YOU WILL NEED:
for 4 people

  • 320g cooked red lentil
  • 150g carrot
  • 2 tbsp olive oil
  • ½ medium onion, chopped
  • ½ tsp dried coriander powder
  • ¼ tsp cinnamon powder
  • ½ tsp dried ginger
  • ¼ tsp curcuma powder
  • ½ tsp cumin powder
  • ¼ tsp cardamom powder
  • Juice from ½ orange or 1 tbsp applecider vinegar
  • ½ teaspoon salt
  • 50g crushewd toasted cashews
  • 2 tbsp raisins

HOW TO:

  1. Heat a frying pan with a drizzle of olive oil and fry the chopped onion with all the spices for about 2 minutes;
  2. Add the carrot slices and orange juice and cook it for about 5 minutes;
  3. Transfer the cooked carrots with the spices to a blender or food processor with the red lentil and blend it for about 2 minutes until it becomes a thick, smooth paste. Set aside to cool down;
  4. Mix with the crushed nuts and raisins;
  5. Use it to fill the speed dosas, as a spread over your toast or as a topping to your favorite salad;
