This Spread is just the best alternative to the classic Foie Gras. We all know it is always expected on Christmas table but also one of the first meat products we avoid! Christmas is about Love so I am giving you this recipe so you and your loved ones can enjoy a guilt free Spread full of richness, nutrition and love!

WHAT YOU WILL NEED:
For 1 big portion (4-6 people)
- 1 shallot, shopped
- 5-6 big mushrooms, diced
- ¼ teaspoon salt
- 1 garlic clove, mashed
- 1 tablespoon olive oil
- 1 tablespoon mild miso paste
- 1 tablespoon soy sauce
- 1 teaspoon fresh rosmary
- 1 teaspoon fresh thyme
- 1 teaspoon fresh sauge
- 200g cooked Lentil
- 60g walnuts
- 2 tablespoons cognac
- 1 tablespoon cooked beetroot
HOW TO:
Fry the shalots and garlic with the olive oil until soft and juicy;
Add the mushroons, herbs, miso and soy sauce and let it simmer for about 3-5 minutes until the mushroons look juicy and cooked;
Transfer all the ingredients to a blender or food processor with the lentils, cognac, beetroot and cognac and blend it until smooth and creamy;
Tranfer the paste to a ramequin and wait that it cools down before serving;
Once it is cold you can also shape in sausage shape or serve it in slices;
