I warn you already: it’s one more recipe with Reine-Claude Plums!
Behind all this plum recipes is the fact that my in-laws have a Reine-Claude tree in their house and since it’s season and plums are a really delicate fruit, I took about 7 kgs home to be sure they would not end up rotten in the garden. I have also to confess I love it!
I love even more the challenge to create new, different recipes with the same ingredients.
With this Tajine Recipe I try to show how we can change completely our perception of taste of the same Yellow juicy plum.
WHAT YOU WILL NEED:
Serves 3-4 people
- 200g smoked tofu
- 5 reine-caudes plums(you can use other kind of plum or even other fruit)
- 120g siced shitake mushroons
- 1 chopped onion
- 1 mashed garlic clove
- 1 tablespoon olive oil
- 1 tablespoon tomato paste
- ½ cup homemade cashew cream( or store bought almond, soy or oats cream)
- ½ teaspoon cinnamon
- 1 teaspoon coriander powder
- ¼ teaspoon black grounded black pepper
- 1 teaspoon cumin powder
- ½ teaspoon dried ginger powder
- ½ teaspoon curcuma powder
- 1/4bteaspoon grounded fennel seed
- 1 teaspoon oregano
- ½ teaspoon salt
- 1 handful fresh parsley, chopped
HOW TO:
Slice the shitakes, cut small cubes of tofu and plums;
Heat a frying pan with 1 tablespoon of olive oil;
Add the dry spices, salt, onion and garlic and let it simmer in medium heat with a lid on for about 5 minutes, until the onions look soft and juicy;
Add the sliced shitakes, give a stir and cover the pan to let it cook for about 5 minutes;
Add the tofu, the tomato paste and the cashew cream and bring everything to boil;
Add the plum cubes and let it cook in medium heat for quick 3 minutes, just to help the plum to release its juices into the tajine;
Check the spice and salt level and adjust if needed;
Tajine is normally served with some warm fluffy couscous you can enjoy it in the traditional way if you like;
I chose to cook some millet instead and just loved!
