WHAT YOU WILL NEED:
Serves 3-4 people
Cream Sauce:
- 80g soaked sunflower seeds or cashew nuts
- 100g soft tofu
- 70ml water
- Pinch of curcuma powder
- ¼ tsp salt
- ¼ tsp black salt
- 1 tsp Nutritional Yeast
Egg:
- 200g soft tofu
- Pinch of curcuma powder
- Pinch of black salt
- Pinch of salt
- 30g soaked sunflower seeds(optional)
Tofu Bacon: :
- 120g smoked tofu, thinly sliced
- 1 tsp maple syrup
- 2 tsp olive oil
- 1 tsp tomato paste
- 350g dried long pasta
- Optional vegan parmesan cheese
HOW TO:

- Blend all the ingredients of the sauce until creamy;
- Using a non-sticky, fry the soft tofu with the spices and chopped sunflower seed for 1 minute;
- Bacon: mix the ingredients together and bake it for about 10 minutes at 180°C;
- Cook the Pasta in boiling water until al dente;
- Save 1 cup of the cooking water and rinse the pasta;
- Add the Pasta back to the pan with the sauce, “egg” and the cup of cooking water;
- Let it simmer for 1-2 minutes until reduced;
- Turn off the heat and mix in the tofu bacon;
- Top everything with some vegan parmesan(optional)
