WHAT YOU WILL NEED:
Serves 3-4 people
Churros:
- 60g chickpea flour
- 40g rice flour
- 250ml water
- 1 tbsp coconut oil
- 50ml – 100ml plant milk
- 25g muscovado sugar
- ¼ tsp salt
- ½ tsp cinnamon(optional)
- 1-2 tbsp coconut oil
- 1 tsp cinnamon
- ¼ cup sugar
Hot Chocolate:
- 500ml water
- 2 tbsp oats
- 2 tbsp coconut flakes
- 5-6 dates
- 2 tbsp cocoa powder
- 50g dark chocolate(optional)
HOW TO:
- Churros:Bring the water, oil, sugar and salt to a boil;
- Turn off the heat and add the flour into the hot water, mixing well until it forms a thick dough;
- Add Plant milk if the dough is too thick, it needs to be firm but still sticky;
- Using a piping bag, form the churros in a baking tray and bake at 180°C for about 30-40 min.
- Brush coconut oil around the warm churros and roll them in cinnamon sugar;
- Hot Chocolate: Blend all the ingredients together in a high speed blender until smooth;
- Bring to a quick boil and serve warm with the churros.
