WHAT YOU WILL NEED:
for 3-4 portions
- 260g buckwheat flour
- 25g corn starch
- 60g cocoa powder
- 260g muscovado sugar
- 1/4 tsp baking soda
- 2 tsp baking powder
- ½ tsp salt
- 240ml plant milk + 2 tbsp lemon juice or apple cider vinegar
- 1 tbsp natural vanilla extract
- 120ml olive oil
- 10 tbsp pear puree(or apple sauce)
- 4 pears, cut in half or quarters
HOW TO:
- Mix the plant milk and lemon juice in a jar and let it set for 20-15 minutes;
- With a fouet or in a mixer, mix all the ingredients together at low speed;
- Slowly add the Plantmilk until the batter looks smooth and creamy;
- Transfer the batter to a cake pan and bake it for about 30-40 minutes at 180°C
